What We Have and What’s Expected for the Week of July 20th

Because we are fortunate to have warehouse freezer space for all of our back stock of frozen meats, we usually don’t run low on pork! We also aim to bring 8-12 pigs in to the processor at a time to minimize the per pound cost of transport and keep prices lower.
So we don’t often run out of many cuts of pork, but this time we were out of both bone-in and boneless pork chops, Boston butt and picnic shoulder roasts, as well as tenderloins, baby back ribs and Italian sausage links for weeks!
They’re back in stock now as I picked up a bunch of pork we processed this month from our USDA slaughterhouse on Wednesday.
We also got in more primal blend ground beef from another USDA butcher and we’re fairly stocked up on pastured chicken from A&A Acres, Gulf seafood and we’re a little more limited on our wild-foraged goat meat.
Tofu is stocked up too and we are starting the week with more hummus than usual, especially the large sizes of the dressed ones and plain traditional hummus.
Summer veggies is still colorful and beautiful (and free of parasites!), but we are starting to reach the point in the summer where variety is getting a little more limited. Some farms are on their summer breaks and honestly, it is hard to grow much variety in this oppressive heat. Melons are the only fruit we expect this week, as peaches are in a lull and celeste figs are done for the season, along with blueberries.
We also have La Rive kombucha and expect more Gingerbooch drinks and fermented veggies later in the week.
We have plenty of chicken eggs and expect a few more dozens of duck eggs and small pullet eggs on Tuesday and Thursday.
Feliciana’s Best Creamery and Southern Maids Goat Dairy are set to deliver on Tuesday and Wednesday respectively.
There’s lots of frozen brioche buns (two sizes) and honey oat loaves, along with pizza dough and crostini and we’ll get more fresh pasta on Tuesday and fresh bread and buns on Wednesday and Friday.
We’re stocked up on rice, grits, cornmeal, farro, black eyed and red peas, stone-milled whole wheat flours, olive oils and vinegars, jams and jellies, herbal teas, locally roasted coffee and lots more.
Pick Up & Delivery Options:
Our Metairie store is open 10 am-6 pm, Tuesday-Saturday as usual. Daily order deadline is 3 pm. Or you can shop in person!
Bogalusa Farm Pick Up is an option on Wednesday, Thursday, Friday or Saturday morning, 8 am-noon. Order deadline is the day prior at 2 pm.
Later Mandeville Farm Hub on Wednesday, 2:30-3 pm at Open Spaces Studios, 1281 N Causeway Blvd. #1, Mandeville. Home deliveries in an 8 mile radius around Open Spaces available before and afterwards. Deadline to order is 10 am on Wednesday.
Later Covington Farm Hub also on Wednesday, 4-4:30 pm at Nur’s Kitchen, 100 N Tyler St., Covington. Home deliveries in an 8 mile radius around Nur’s Kitchen available before and afterwards. Deadline to order is 9 am on Wednesday.

Friday: Bellegarde Bakery bread, brioche buns and crostini, Tien Dat tofu, Rose Wagon Ranch microgreens, Gingerbooch kombucha, probiotic lemonade and limeade, kimchi and kraut.
What We Have & What’s Expected This Week by Category:
Donations for Mutual Aid: We made two mutual aid drop offs last week including Roma and Beefsteak tomatoes, Japanese eggplant, cucumbers and sweet peppers. We’re doing a big push for mutual aid right now because it’s a great way to allow us to keep buying in volume from our farmers throughout the slower summer and get extras into the kitchens of people who utilize community fridges!
Pastured Eggs: Mixed size chicken eggs to start the week with a few more duck and pullet eggs coming in on Tuesday and more on Thursday.
Pastured Dairy: Just goat cheese and yogurt to start the week, with Feliciana’s Best Creamery set to deliver more milk, chocolate milk and creole cream cheese on Tuesday (hopefully their cream separator is fixed, too, we haven’t heard yet). More goat milk will come in on Wednesday as usual.
Bread & Pasta: There’s plenty of frozen brioche buns and honey oat loaves, plus crostini and pizza dough and limited frozen pasta. More fresh pasta is coming in on Tuesday and more fresh bread and buns on Wednesday and Friday.
Local Produce: Cold pressed turmeric juice is back, plus frozen blueberries, fresh herbs, garlic, leeks, turmeric root, lots of microgreens, baby tatsoi salad greens, sweet lunch box or purple islander peppers, gold or red beets, slicing cucumbers, kohlrabi, pink salad radishes and butternut, delicata or zephyr squash. We’re expecting more okra, peppers, red cabbage, beefsteak and cherry tomatoes, sweet corn and zucchini on Tuesday and then more salad greens and eggplant on Thursday.
Plant-Based Protein: All three fresh tofu options — plain, black mushroom and red chili lemongrass, plus both fried tofu cube flavors, too.
Bone Broth: Currently due to a required labeling change, we only have chicken bone broth from A&A Acres or pet bone broth from Credo Farms. We should be getting beef and trinity back in stock soon.
Forest-Raised Pork: All stocked up with bacon and bacon ends, plus jowl bacon, tenderloin, bone-in or boneless chops, stew meat, Boston butt or picnic shoulder roasts, spare ribs, smoked Andouille, bratwurst, breakfast, Cajun, Italian or kielbasa links, plus ground breakfast, chorizo or Italian sausages and plain ground pork, along with jowls, bones, smoked bones, smoked hocks, trotters, ears, liver, tails, tongue and lard to render.
Grassfed Beef: Primal blend ground beef is back in stock and we have plenty of one pound packs of plain ground beef as well. There’s also ribeyes, top sirloin or sirloin tip steaks, chuckeye steaks, tri tip, brisket, rump roasts, stew meat, short ribs, tongue, bones and fat to render.
Grassfed Buffalo: Don’t sleep on the buffalo bones for bone broth! We’re otherwise out of ground buffalo at the moment, hoping to restock on Thursday.
Wild-Foraged Goat Meat: It’s almost time for us to process again to restock cuts. But in the meantime, we have ground goat meat, loin or sirloin chops, shanks, riblets, rib racks and bones.
Pastured Poultry: There’s plain or traditional/seasoned bone broth, plus green onion sausage, whole or half birds, tenders, breasts, thighs, leg quarters, drumsticks, wings, feet, livers and hearts, along with dehydrated feet, livers and skin for pet treats. We’ll restock ground chicken, breakfast sausage patties and frames/bones for broth on Wednesday.
Gulf Seafood: There’s new speckled trout or redfish filets, plus filets of yellowfin tuna, red snapper and sheepshead, along with red snapper taco strips, soft-shell crabs, tenderized alligator strips, smoked tuna portions, crawfish tails and all three sizes of shrimp.
Coffee & Tea: Lots of herbal and reishi based teas from Family Fungi, and plenty of Flamjeaux Coffee in whole bean or ground, just restocked on Thursday.
Dips & Condiments: There’s more large sizes of dressed hummus to start the week than usual and plenty of traditional hummus, too. Restock on Thursday as usual.
Pantry: GraNOLA, GraNOLA bars, plus customer favorites glazed pecans, pecan butter and Crop to Pop-corn. There’s restocked pecan meal for baking, plus fresh-milled flour from both Barton Springs Mill and Bellegarde. And there’s infused vinegars, salts and sugars from Rose Wagon Ranch and Texas olive oil and balsamic vinegar and mushroom and kelp-based seasonings, dehydrated mushrooms, mushroom powder, chili oil and hot sauces.
Pet Treats: Pet bone broth, plus dehydrated chicken feet, livers and skins.
Sweets: Wisconsin maple syrup is stocked up! And there’s plenty raw honey in glass jars or plastic squeeze bottles, elderberry juice, infused blueberry honey and creamed honey.
Rice, Grains & Stone Ground Corn Products: Lots of rice, grits, cornmeal and whole grain and clay pea options from Two Brooks Rice and Marsh Hen Mill, plus stone-milled flours from Barton Springs Mill.
Ferments: Blueberry or Hoppy Orange kombucha, plus there’s various krauts, kimchi and other veggie ferments from Gingerbooch, Resurrection Gardens and VEGGI. Should be restocking Gingerbooch late this week.
Preserves: Lots of jams, jellies, preserves, pickles and hot sauces from Josey’s Goods, plus hot sauce from Sky Ridge Farm and Major Acre Farm.
Herbal Remedies: Several tinctures from ALL CAPS and Family Fungi, along with Reishi Elderberry syrup. There’s also turmeric and ginger tinctures from L4S Farms and plus fire cider and mineral manna oxygens from Family Fungi and a few elderberry juice and infused honey options from Cockeyed Farms.
