What We Have and What’s Expected for the Week of August 11th

We finally restocked Anna Marie gulf shrimp last week! They didn’t have more red grouper and red snapper filets ready, but they did bring more soft-shell crabs, sheepshead filets, alligator strips, red grouper collars and smoked almaco jack. And they have a new and improved brine recipe on the smoked fish and I can confirm it’s even more delicious than it used to be!
Plus we have bunch of beautiful pesto and hummus from Nur’s Kitchen and frozen pasta from Il Supremo, with more fresh pasta coming on Tuesday as usual.
There’s also arugula from Homegrown in Folsom, with more on its way tomorrow, Tuesday. And Screaming Oaks is back from vacation, so we have an five types of gourmet mushrooms including blue and gold oyster, chestnut, lion’s mane and pioppino mushrooms.
We also got in a bunch of chicken from Pearl River Pastures, so there’s more customer favorite thighs, plus whole birds, breasts, drumsticks, frames for broth and hearts and livers. And we have plenty of ground chicken, five types of chicken sausages and more from A&A Acres, too, plus wings and broth from Credo Farms.
We had even more stone-milled flour come in from Barton Springs, including more rye flour and new Einkorn flour! Einkorn is an ancient grain that has a higher percentage of protein than modern red wheats and is considered more nutritious because it also has higher levels of fat, phosphorus, potassium, pyridoxine, and beta-carotene. It has flavors of deep toasted graham and besides breads is great in cookies, pancakes, waffles and cornbread. We’ve had customers come in looking for it before, so we’re excited to finally offer it!
Plus there will be plenty of produce this week, although the storefront is a little limited today, Monday, as we sold out of a bunch of things on Saturday. We’re expecting more slicing cucumbers, Asian pears and sweet peppers on Tuesday and then more cherry tomatoes, okra, Japanese eggplant, pickling cucumbers and mixed summer squash on Thursday.
Eggs are still bountiful from our three flocks, especially the young flock (who are literal spring chickens!), plus there’s plenty of goat cheeses and limited goat milk, with more Feliciana’s Best Creamery products scheduled to be delivered on Tuesday as usual.
In the protein realm, in addition to the Gulf seafood and pastured chicken mentioned above, there’s plenty of pastured pork, wild-foraged goat meat and local homemade tofu. Grassfed beef is still limited, but we will be processing in a few more weeks!

Donations for Mutual Aid: Hunter did another Saturday drop off of okra, peppers, eggplant and, squash. Thanks so much for continuing to give so we can make these drops. Especially in the summer when it’s a little slower, it allows us to still order full cases of produce from our farmers and be able donate any excess each week.
Pastured Eggs: The hens keep cranking out the eggs, especially the young flock, so we’re able to keep eggs on sale at $7 per dozen right now. And we will likely not be returning to sizing eggs. It takes a ton of time, plus then the time to hold certain sizes for orders later in the week or find egg in the new batches brought down from the farm to fulfill those. Plus none of our peers that we source eggs from when we don’t have enough of ours size them, so we’re keeping it simple for now to save time and thus save passing along those costs to you!
Pastured Dairy: Plenty of Southern Maids cheeses and yogurt, limited milk and Feliciana’s Best creole cream cheese, too. More whole milk, heavy cream, half & half and chocolate milk set to be delivered on Tuesday as usual.
Bread & Pasta: Frozen pastas in several shapes, plus a few frozen brioche buns, honey oat loaves and pizza dough. Plenty of crostini, too, and more fresh bread and buns coming on Wednesday and Friday as usual.
Local Produce: Peaches, arugula, turmeric, five types of mushrooms, sugar snap pea or sunflower microgreens, Japanese eggplant, hot cherry, sweet lunch box or shishito peppers, frozen pink eyed peas, hakurei turnips and summer squash mix.
Plant-Based Protein: Plain tofu, black mushroom tofu and red chili lemongrass tofu.
Bone Broth: Plenty of beef, chicken or trinity, as well as pet bone broth.
Forest-Raised Pork: There’s the new rendered pork lard that Credo Farms is making, plus bacon ends are joining the pork sale items! Spare ribs are still on sale, too, along with smoked hocks, jowls, trotters and bones. There’s also sliced bacon, tenderloins, bone-in or boneless chops, Boston butt or picnic shoulder roasts, plain ground pork plus several linked or ground sausages and smoked Andouille, hearts, kidney, liver, tongue and fat to render for lard.
Grassfed Beef: We’re low on beef a we wait to process the next round, but there’s bones on sale, hamburger or slider patties, chuck eye steaks, sirloin tip steaks, brisket, tenderized round steaks, osso bucco shanks, riblets, short ribs and trim.
Wild-Foraged Goat Meat: We have plenty of goat meat, including ground goat, loin or rib chops (also known as rack steaks), chuck (shoulder) or leg roasts, neck roasts, stew meat/kebab pieces, ribs, shanks, bones and paya (trotters), Rocky Mountain oysters, kidney and heads.
Pastured Poultry: All stocked up on chicken! There’s all the linked sausages, plus breakfast sausage patties and plain ground chicken and whole and half birds. We also have (almost) all the cuts: boneless breasts, thighs, drumsticks, wings, back and neck packs for broth and livers and hearts. We’re expecting more tenders and more leg quarters on Wednesday.
Gulf Seafood: Finally there’s more shrimp, in all three sizes! Plus there’s also soft-shell crabs, sheepshead, tenderized alligator strips, grouper collars and smoked fish portions — both almaco jack and barracuda.
Coffee & Tea: We had a Flamjeaux restock on Thursday, so there’s more whole bean in several different origins and roast levels and ground coffee, too. Plus there’s cold brew, chai concentrate and simple syrups from Church Alley and a variety of herbal teas from Family Fungi.
Dips & Condiments: Various flavors of hummus and pesto, too!
Pantry: A bunch of GraNOLA in stock, along with glazed pecans, pecan butter, pecan meal and pecan oil from Guidry’s. There’s also black garlic, lion’s mane or oyster mushroom powder and Caps & Cream soup and dip mix from ALL CAPS and dried mushrooms from Family Fungi, two kinds of mushroom seasoning, chili oil from VEGGI Coop, hot sauces, Texas olive oil and balsamic vinegar. Plus we have all the new herb-infused salts, sugars and vinegars from Rose Wagon Ranch.
Pet Treats: Dehydrated chicken necks and feet are back in stock, plus Pet Bone Broth.
Sweets: Plenty of our Wisconsin maple syrup, plus local raw honey, elderberry juice, infused elderberry honey, infused blueberry honey and creamed honey.
Rice, Grains & Stone Ground Corn Products: Lots of rice, grits, cornmeal and whole grain and clay pea options from Two Brooks Rice and Marsh Hen Mill, plus restocked stone-milled flours from Barton Springs Mill and Bellegarde.
Ferments: Three flavors of Gingerbooch and four flavors of kombucha from La Rive, plus various kimchi and kraut options from Gingerbooch, VEGGI Coop and Resurrection Gardens.
Preserves: Various pickles (dill, bread & butter, squash and zucchini and beets), plus lots of fruit jams and jellies and preserves and pepper jellies.
Herbal Remedies: New turmeric and ginger tinctures, plus various lovely mushroom and herb tinctures from Family Fungi along with reishi and herbal teas. There’s also Fire Cider, Mineral Manna electrolyte oxymel and a few elderberry syrups and juices from Family Fungi and Cockeyed Farms.
