What We Have and What’s Expected for the Week of January 19th

Y’all really did a number of the first round of our Local Cooling Farms grass-finished beef from our latest harvest last week, but not to worry because we will be restocking from our freezer warehouse on Tuesday afternoon.
So we did already sell out of NY Strip steaks, top sirloin, Denver and skirt steaks, along with tri tip, eye of round and chuck roasts, Korean style short ribs and heart and kidney, but we will get more of those cuts, plus more ground beef, tenderized round steaks, sirloin tip steaks and shoulder roasts on Tuesday.
I also marked some ribeyes and NY strip steaks from the cow we harvested separately and on sale. Most premium beef is from young steers, but other cultures prize the mineral development and flavor from older animals. In ground beef and roasts and ribs, the difference isn’t noticeable in any negative way, but in these steaks, the sinew/nerve end between the muscle and the fat cap is tougher than from young steers.
The meat is tender as can be, it's just the connective tissue that differs. Grant and I would happily eat all the steaks from this cow ourselves (we tried one of each last weekend), but we’re offering them to you on sale from the regular ribeye and NY strip prices. More of those steaks from our steers coming on Tuesday with the rest of the restock.
Credo Farms restocked whole chickens, lard soap and all of their bone broths on Friday, too, and we have lots of other chicken cuts and sausages from A&A Acres, along with our Local Cooling Farms pastured pork and wild-foraged goat and limited Gulf seafood.
We are also expecting strawberries from Faust Farms tomorrow — they’ve been a little slower growing in the cooler weather and there’s been a lot of putting on and then taking off the row covers!
The rest of the winter produce situation is truly beautiful with tons of salad greens and herbs, mushrooms, purple cauliflower and broccolini bunches, lots of root veggies and purple sweet potatoes. We’re coming to the end of apple and citrus season, but we still have Pink Lady apples and grapefruit and Cara Cara oranges to start the week.
We also have lots of the small size pullet eggs on sale, limited duck eggs and more regular mixed size chicken eggs from our mature flocks coming on Tuesday.
And there’s plenty of tofu in several flavors, hummus and pesto (more coming Thursday as usual), a new mango hot sauce, several goat cheeses, with both dairies delivering their usual orders on Tuesday and Wednesday as usual, frozen pasta, bread and buns, crostini, stone-milled flours, rice, grits, clay peas, oils and vinegars, maple syrup and honey and more!

Our Metairie store is open 10 am-6 pm, Tuesday-Saturday as usual. Daily order deadline is 3 pm.
Bogalusa Farm Pick Up is an option on Wednesday, Thursday, Friday or Saturday morning, 8 am-noon. Order deadline is the day prior at 2 pm.
Mandeville Farm Hub on Wednesday, 1-1:30 pm at Open Spaces Studios, 1281 N Causeway Blvd. #1, Mandeville. Home deliveries in an 8 mile radius around Open Spaces available before and afterwards. Deadline to order is 9 am on Wednesday.

Donations for Mutual Aid: We did a big drop off last Saturday, so weren’t quite ready for another yet this past Saturday! There’s definitely an increased demand at the community fridges right now, so we appreciate your mutual aid shares as much as ever!
Pastured Eggs: Small pullet eggs from our new flocks, plus half dozens of duck eggs from Compostella and a bunch of regular mixed size dozens coming Tuesday to start the week!
Pastured Dairy: A few goat cheeses to start the week and then we expect whole milk, heavy cream, half & half, chocolate milk and creole cream cheese from Feliciana’s Best Creamery to be delivered by Tuesday afternoon and more goat milk, yogurt and cheeses from Southern Maids on Wednesday.
Bread & Pasta: We have several shapes of frozen pasta from Il Supremo, plus frozen honey oat loaves and brioche buns in hamburger or slider size, frozen pizza dough balls and crostini from Bellegarde. We’ll get fresh bread and buns on Wednesday and Friday and more fresh pasta on Tuesday, too.
Local Produce: Fresh cold-pressed turmeric juice, plus turmeric root, grapefruit and Cara Cara oranges, Pink Lady apples, garlic chives, gold oyster, king trumpet, nameko, oyster and shiitake mushrooms, green onion, radish or sunflower microgreens, radicchio, baby arugula, lettuce, mustard greens, plus mustard greens, purple cauliflower, broccolini bunches, orange or rainbow carrots, gold, chioggia or red beets, kohlrabi, hakurei turnips, red rover or watermelon radishes and purple sweet potatoes. Plus we’re expecting more dill, parsley, Little Gem lettuce, collards and fennel from River Queen Greens on Tuesday evening and more baby spinach, tat soi, spring mix, lettuce and head lettuces from Homegrown in Folsom on Thursday.
Plant-Based Protein: Plain or two flavors of tofu, plus fried cubes of black mushroom tofu.
Bone Broth: Restocked beef broth, chicken broth, Trinity broth and pet bone broth on Friday.
Forest-Raised Pork: Restocked lard soap, plus rendered lard, new smoked jowl bacon ends and smoked bones, a sale on spare ribs, jowls, bones, trotters and smoked hocks, plus plenty of bacon, bacon ends, bone-in or boneless chops, Boston butt or picnic shoulder roasts, crosscut shanks, liver and unrendered pork fat, plus limited ears and tongue. The only sausage we have left is ground breakfast sausage. We’re processing more pigs next week, so should have the sausage from that batch back by mid February.
Grassfed Beef: There’s just one pack from ground beef going into the week, but we’ll restock tomorrow afternoon! And there’s also filet mignon, single boneless ribeyes, flat iron, chuckeye and flank steaks, brisket, stew meat, English style short ribs, osso bucco shanks, liver and fat/trim. There’s also Dino rib racks from Little Creek and rendered tallow balm from Credo Farms.
Wild-Foraged Goat Meat: Don’t sleep on the new goat sausages — they’re limited and super delicious. Plus there’s four types of chops/steaks this time: loin, rib, sirloin and shoulder as well as more leg and shoulder roasts. And we’re continuing our sale on plain ground goat, stew/kebab pieces, neck roasts, shanks and ribs. There’s organ meats and bones, too!
Pastured Poultry: This week, it’s chicken thighs were sold out of until Wednesday afternoon, but we have two sizes of whole birds from Credo Farms, plus half chickens, tenders, breasts, leg quarters, wings, drumsticks, frames and livers, plus ground chicken and several types of sausages from A&A Acres. We also have chicken hearts from Cassell Family Farm.
Gulf Seafood: Softshell crabs, alligator strips, yellowfin tuna filets, red grouper filets, sheepshead, smoked almaco jack portions, red grouper or red snapper collars. Out of shrimp, but aiming to restock this week or next week.
Coffee & Tea: Still have a good variety of roast options in whole bean or ground coffee and restocking even more on Thursday. We also have lots of Family Fungi’s herbal and reishi teas.
Dips & Condiments: There’s several large size hummus options to start the week and plenty of pesto. Then we’ll get more of all the hummus flavors and sizes on Thursday.
Pantry: Infused vinegars, salts and sugars from Rose Wagon Ranch, along with Texas olive oil and balsamic vinegar and pecan oil and pecan butter from Guidry Organic Farms. There’s also other mushroom and kelp-based seasonings, dehydrated mushrooms, mushroom powder, chili oil and hot sauce (including a new mango hot sauce), glazed pecans and popcorn.
Pet Treats: Dehydrated chicken feet or skin from A&A Acres.
Sweets: Plenty of our Wisconsin maple syrup, plus local raw honey, elderberry juice, infused blueberry honey and creamed honey.
Rice, Grains & Stone Ground Corn Products: Lots of rice, grits, cornmeal and whole grain and clay pea options from Two Brooks Rice and Marsh Hen Mill, plus stone-milled flours from Barton Springs Mill.
Ferments: Limited La Rive kombucha, with more expected on Wednesday, plus limited Gingerbooch kombucha, as well. There’s also a few types of kimchi from VEGGI Coop and Resurrection Gardens, as well as kraut, giardiniera and chow chow.
Preserves: Lots of great fruit jams, jellies and preserves available from Josey’s Goods, plus pepper jellies and pickles.
Herbal Remedies: Finally did a big restock from Family Fungi, so we have all four of their tinctures back in stock, along with Reishi Elderberry syrup. There’s also turmeric and ginger tinctures from L4S Farms and plus fire cider and mineral manna oxygens from Family Fungi and a few elderberry juice and infused honey options from Cockeyed Farms.
