Our own Local Cooling Farms grass-finished beef is back in stock for the first time in many months!
Because cattle prices remain very high and we don’t have a breeding herd of mama cows and don’t have the budget to buy a bunch more stockers at these prices, we held on to our cattle and put more weight on them before harvesting than we often do.
Our rationale was that since we are going to be out of our own beef for long stretches of time over the next couple of years, we may as well make the absolute most of the animals we did have.
And that paid off in some of the heaviest hanging weights and best marbling we’ve had, without feeding any grain!
For a few reasons, we went a little farther to the USDA processor we typically just use for pork, versus the slightly closer Halal USDA processor we often use for beef and goat meat. That means some of the cuts might have a slightly different style and the label is different. But rest assured, it’s the same beef!
We were also able to do some goat sausages at this processor that we’re excited about and hope to roll out more flavors after this trial batch, but unfortunately they cannot do Caveman/primal ground beef or patties at this time. So all the ground was packaged in one pound and two pound packs and the liver and heart is all separate.
We have a lot of beef tucked away in the deep freezer at our public freezer warehousing unit and the first stock up at the shop includes tons of ground beef, plus filet mignon, ribeye, NY strip, chuck eye, Denver, top sirloin, flat iron, flank and skirt steaks, plus chuck roasts, tri tip, brisket, eye of round roasts, stew meat, English or Korean style short ribs, osso bucco shanks and organ meats!
From the goat harvest, there’s the new ground chorizo or hot Italian link sausages, plus loin, rib, sirloin and shoulder chops and shoulder and leg roasts back in stock. The hot Italian sausage links do use a hog casing, so this isn’t for those avoiding pork entirely just yet, but we’re hoping to be able to source collagen or lamb casings and offer some additional goat sausage flavors in the future (hopefully a Merguez blend, a herb heavy Greek blend and more!)
And besides all the grassfed proteins, we’re also stocked up on lots of beautiful veggies, apples and citrus, pastured chicken, pork and eggs, Gulf seafood, fresh locally made tofu, hummus, frozen pasta, bread and buns, stone-milled grains and flour, oils and vinegars, fermented veggies and kombucha and lots more.
More fresh dairy from Feliciana’s Best is coming on Tuesday as usual. We’re starting the week with just a few pullet eggs and duck eggs, but lots more eggs will be restocked on Tuesday.
Pick Up & Delivery Options:
Our Metairie store is open 10 am-6 pm, Tuesday-Saturday as usual. Daily order deadline is 3 pm.
Bogalusa Farm Pick Up is an option on Wednesday, Friday or Saturday morning, 8 am-noon. Order deadline for next day pick up is 2 pm.
Bywater Farm Hub on Thursday, 5-6 pm at Parleaux Beer Lab, 634 Lesseps St. Home deliveries in 70116 and 70117 beforehand. Deadline to order is noon on Thursday.

Donations for Mutual Aid: Hunter did a mutual aid drop off on Saturday that included some eggs, mushrooms and Bellegarde bread on Saturday. Thanks for your continued gifts to support this program. Now that eggs are abundant again with the new flocks laying, I added egg shares back as an option, in addition to produce.
Pastured Eggs: Small pullet eggs from our new flocks, plus half dozens of duck eggs from Compostella and a bunch of regular mixed size dozens coming first thing Tuesday to start the week!
Pastured Dairy: Starting the week with goat milk, various feta cheeses, chèvre and creole cream cheese from Southern Maids and expecting the full lineup of whole milk, heavy cream, half & half, chocolate milk and creole cream cheese from Feliciana’s Best Creamery on Tuesday.
Bread & Pasta: We have several shapes of frozen pasta from Il Supremo, plus frozen brioche buns in hamburger or slider size, frozen pizza dough balls and crostini from Bellegarde. We’ll get fresh bread and buns on Wednesday and Friday and more fresh pasta on Tuesday, too.
Local Produce: Fresh cold-pressed turmeric juice, plus turmeric root, grapefruit and Cara Cara oranges, Arkansas Black or Pink Lady apples, cilantro, parsley and scallions, chestnut, gold oyster, king trumpet, oyster, pioppino and shiitake mushrooms, broccoli, cilantro, radish or sunflower microgreens, radicchio, baby arugula, lettuce, mustard or tatsoi salad greens, plus River Queen’s winter salad mix, collard green or curly kale bunches, cabbage, broccolini, orange or rainbow carrots, chioggia beets, kohlrabi, hakurei turnips, red rover or watermelon radishes, acorn squash and purple sweet potatoes.
Plant-Based Protein: Plain or two flavors of tofu, plus both flavors of fried tofu cubes.
Bone Broth: Down to just chicken broth, but should be restocking on Friday!
Forest-Raised Pork: Rendered lard, new smoked jowl bacon ends and smoked bones, a sale on spare ribs, jowls, bones, trotters and smoked hocks, plus plenty of bacon, bacon ends, bone-in or boneless chops, Boston butt or picnic shoulder roasts, crosscut shanks, Italian sausage links and ground breakfast or Italian sausages, liver and unrendered pork fat, plus limited ears, tongue and stir fry strips. Lard soap, too!
Grassfed Beef: So thrilled to be stocked up on ground beef and lots of cuts from our own Local Cooling Farms beef! There’s filet mignon, ribeye, NY strip, chuck eye, Denver, top sirloin, flat iron, flank and skirt steaks, plus chuck roasts, tri tip, brisket, eye of round roasts, stew meat, English or Korean style short ribs, osso bucco shanks, liver and bones.
Wild-Foraged Goat Meat: Restocked on lots of goat cuts, too, along with the new ground chorizo or hot Italian link sausages. There’s four types of chops/steaks this time: loin, rib, sirloin and shoulder as well as more leg and shoulder roasts. And we’re continuing our sale on plain ground goat, stew/kebab pieces, neck roasts, shanks and ribs. There’s organ meats and bones, too!
Pastured Poultry: We’re out of chicken breasts until Wednesday afternoon, but fairly stocked up on everything else, including whole birds, half birds, tenders, thighs, leg quarters, wings, drumsticks, frames and livers, plus ground chicken and several types of sausages from A&A Acres. We also have chicken hearts from Cassell Family Farm.
Gulf Seafood: Softshell crabs, alligator strips, yellowfin tuna filets, red grouper filets, sheepshead, smoked almaco jack portions, red grouper or red snapper collars and large or medium size shrimp.
Coffee & Tea: Restocked ground and whole bean coffee on Thursday, so we have a bunch of different roast options in each. We restocked Family Fungi’s teas, as well.
Dips & Condiments: There’s a good amount of hummus and pesto to start the week and we’ll get another restock on Thursday, as well.
Pantry: Glazed pecans are back in both sizes and so is Crop to Pop-corn. And there’s lots of infused vinegars, plus salts and sugars from Rose Wagon Ranch, along with Texas olive oil and balsamic vinegar and pecan oil and pecan butter from Guidry Organic Farms and apple cider vinegar from Scott’s Orchard. There’s also other mushroom and kelp-based seasonings, dehydrated mushrooms, mushroom powder, soup & dip mix, chili oil and hot sauce and more!
Pet Treats: Dehydrated chicken livers from A&A Acres.
Sweets: Plenty of our Wisconsin maple syrup, plus local raw honey, elderberry juice, infused blueberry honey and creamed honey.
Rice, Grains & Stone Ground Corn Products: Lots of rice, grits, cornmeal and whole grain and clay pea options from Two Brooks Rice and Marsh Hen Mill, plus stone-milled flours from Barton Springs Mill.
Ferments: Two flavors of La Rive kombucha, as well as all three flavors of Gingerbooch kombucha. There’s also a few types of kimchi from VEGGI Coop and Resurrection Gardens, as well as kraut, giardiniera and chow chow.
Preserves: Lots of great fruit jams, jellies and preserves available from Josey’s Goods, plus pepper jellies and pickles.
Herbal Remedies: Finally did a big restock from Family Fungi, so we have all four of their tinctures back in stock, along with Reishi Elderberry syrup. There’s also turmeric and ginger tinctures from L4S Farms and plus fire cider and mineral manna oxygens from Family Fungi and a few elderberry juice and infused honey options from Cockeyed Farms.
