SOUTHERN CHILI LAB
Southern Chili Lab is the collaboration of two Lafayette-born chefs, now based in Orange Beach, Ala. They proudly ferment peppers for hot sauce, chili crisp and sambal using Trapani sea salt from the coasts of Italy. Fermentation is at the core of every product they make, adding a depth of flavor that is unmatched. Everything made gets analyzed in multiple categories from heat level, viscosity, flavor etc. to make sure each recipe is exactly achieved.
